retail therapy

I've got a bad attitude when it comes to Monday. I don't like the way it rushes in way too quickly and disrupts my pleasant weekend. I feel like I am perpetually late to everything, and I also tend to look a little homeless. My clothes are usually wrinkled, and hair may or may not be brushed. It's real cute.

As this has been a running theme in my life since I got my drivers license and could choose sleep over getting up early, I'm pretty sure it's not changing any time soon. Sooooo I'm embracing it. I bought this nifty print today from funnelcloud. I have the perfect spot for it, right next to my bathroom mirror.

happy things




Happy Friday!!!

I am so excited for the weekend. We're headed to Dallas this afternoon to visit with family, get my ring re-sized and support a couple friends running in the Race for the Cure half marathon. Ready to get on the road!

I love lemons.


I came across this little piece of loveliness here while I was on my lunch break today. (Yes, I browse foodie websites while I eat.) Thought I'd share the recipe, which I will definitely be using soon.

Sausage, Chard, and Lemon Lasagna

Ingredients

  • 3 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup finely grated Parmesan cheese (about 4 ounces)
  • Coarse salt and freshly ground pepper
  • 5 cups coarsely chopped Swiss chard (about 1 bunch)
  • 1 pound sweet italian sausage, casings removed
  • 1 lemon, very thinly sliced
  • 6 no-boil lasagna noodles, preferably Barilla

Directions

  1. Melt butter in a saucepan over high heat. Stir in flour; cook for 2 minutes. Whisk in milk. Bring to a boil, stirring. Reduce heat. Simmer for 1 minute. Remove from heat. Whisk in 3/4 cup cheese, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir in chard.

  2. Preheat oven to 350 degrees. Cook sausage in a skillet over high heat, breaking up pieces, until no longer pink, about 4 minutes.

  3. Cover lemon slices with cold water by 3 inches in a saucepan. Bring to a boil. Reduce heat; simmer for 7 minutes. Transfer to a paper-towel-lined plate using a slotted spoon.

  4. Spread 1/4 cup sauce in an 8-inch square nonreactive baking dish. Top with 2 noodles, half the sausage, and 1 cup sauce. Repeat. Top with a layer of lemons, 2 noodles, then remaining sauce and lemons. Bake, covered with parchment-lined foil, for 27 minutes.

  5. Remove from oven. Heat broiler. Uncover lasagna; top with remaining 1/4 cup cheese. Broil until bubbling, 2 to 3 minutes.

Right, sooooo....it's been a while.

I've come to the conclusion that grad school makes me inconsistent. and scrambley. and a little bit ridiculous. I'm pretty ready for it to be over so I can be some semblance of normal. Until then, I suppose my blog updates will be exactly like my life. Sporadic and a little all over the place.

Quick life update!
I went to San Fransisco for a conference. Ate fabulous food. Hung out with wonderful people. And learned some pretty cool stuff. All in all, a good trip.

Went home for spring break! I love going home.

The hunt for an internship is still on. No luck so far. I'm still confident it'll all work out, and we'll end up exactly where we're supposed to. And hopefully it will be somewhere fabulous. :)
