Back!

Back from Vegas! It. was. awesome. Miss it already. Pictures to come.
I've been doing some reading today..."healthy reading" you might say. I think some changes are a coming....More news later. :)

The Weekly To Do's


Happy Monday!
After a pretty splendid weekend (even with all the studying) I'm ready to tackle this LAST. DAY. OF CLASS. and have myself a nice 2 week break.
I have quite the set of plans lined up for this week:

finish writing big scary paper
wrap up the final paper trail for work
decorate my new office
make stuffed jalapenos for dinner
do some serious planning for the backyard oasis
zumba AND yoga (x's 2)
mario cart
line up dog sitting schedule for miss stella
pack for VEGAS

Friday the boy and I leave for Vegas for the week where we will meet up with 2 of my most favorite Alabama people and have the time of our lives. :)

Hello Weekend :)

It's FRIDAY!
Halle-stinkin-lujah.
I was pretty sure this weekend would never get here.
It's my birthday weekend :))) And while I have quite a hefty paper due on Tuesday, I have every intention of at least spending part of this weekend celebrating life and enjoying myself.

The plans?
Still undecided. I have a few ideas though. Pretty much anything from this list would be quite lovely:

Seeing SALT
Picnic in the park with puppy and the mister
Flying KITES at a picnic in the park with puppy and the mister
Shopping for patio furniture/designing my new backyard oasis
Picture taking adventure with puppy and mister
Movie night complete with couch and cuddling
FROYO

Of course there will also be some house cleaning, laundry folding and studying happening somewhere in there....but this weekend definitely has potential. :)

Mmm Mmm Good


I'm posting a lot today...
It's because I'm at work.
Today was supposed to be my suuuuuper busy day. 15 appointments. back-to-back-to-back.
But hardly any of my kids have showed up! I've seen about four so far...Ridic.
I haven't been doing homework, because I don't want to get started and then have to stop if an appointment came in...so I've just been web browsing since ohhhh about 830 this morning.

I made taco pie this week!

What is taco pie you ask? Ohhh just about a million calories of cheesy, spicy, sour creamy goodness! It's super yum and one of my absolute favorite things to cook. :)
Monday I made a double portion for the boy and I for dinner/lunch for the week. Whenever I make taco pie it never fails that I forget what temperature I'm supposed to cook it at in the oven. I have to rely on google to find some similar recipe for me evvveerrytime. It's quite sad.

So the boy recommended I put the recipe up here to save me the googling, which I thought was rather brilliant of him. :) So here it is.

Taco pie goodness.

1 lb lean ground beef
1 pack taco seasoning
1/2 can re-fried beans
2 cans crescent rolls
1 zip log baggy full of tortilla chips
1/2 cup sour cream
1 cup of mexi-blend cheese

Preheat oven to 350
Brown meat & add taco seasoning
Spray 9 inch pan generously with cooking spray
Spread crescent rolls over/up sides of pan
Spoon beans into pan
Mix sour cream with cooked ground beef and spread half the mixture in pan
Layer crushed tortilla chips over meat
Layer 1/2 cup of cheese over chips
Complete meat and cheese layer a second time
Bake 30 minutes

YUM.

So I moved. I'm a little behind...like a year...but I figured it was about time.

YESTERDAY WAS MY BIRTHDAY!

24. YIKES. I'm getting old.
It was such a great first birthday in Texas! Yes, there was work and class AND a presentation. But there was also nap time, a plethora sweet emails, text messages and phone calls, cuddling, some sweet stella love and dinner with some of my favorite people in the world.
I feel pretty dang blessed. :)
